I have whatever is opposite of a green thumb (black thumb?). Ive tried over the years to grow plants, flowers, herbs you name it, with no success.
Well alas! I have a basil plant that has survived for a record breaking two months. Now that I have stellar plant, I have become obsessed with basil and try to use it as often as possible. I like to tell the person when eating something I've made, "the basil is from my garden."
A living plant in your kitchen counts as a garden, right?
One of my favorite ways to use basil (and a lot of it) is in a Green Goddess salad dressing that I adapted from Ina Garten
I know making your own salad dressing seems like so much work when there are plenty of delicious bottled ones at the supermarket, but this one is worth the time to make! Low calorie it is not, delicious it definitely is. Use this on a simple salad, the dressing will steal the show!
How can you NOT love something that starts out looking like this?
Yes, I can practically eat this with a spoon!

Ingredients
- 1 cup mayonnaise
- 8 chopped scallions (white and green parts)
- 1 cup chopped fresh basil leaves
- ¼ cup fresh lemon juice (don't use the bottled stuff...yuck!)
- 2 ½ teaspoons chopped garlic
- 2 teaspoons anchovy paste
- 2 teaspoons kosher salt (plus a pinch for good luck)
- 1 teaspoon black pepper
- 1 ½ cups sour cream
- Splash of cream
Directions
Place all ingredients in the blender and process until completely smooth. Refrigerate the dressing until ready to serve. Enjoy!
