Recipe of the Week - Zucchini Bites
Just last week, I was browsing through some online articles and came across this babble article on zucchini bites. They looked so good, I just had to try them. I of course made some minor Diaper-n-Heels adjustments and they came out fantastic! Here's the skinny on how to make these easy treats that even got my husband to finish them!
Ingredients
Take two zucchinis and grate them up. I of course started slicing them zucchinis to roast them and made a last-minute change to the bites, so I threw them in the food processor and viola, just like grated
- 2 eggs
- ½ cup shredded cheese (cheddar, Colby, jack) whatever you have in the fridge will be awesome
- ½ onion. The recipe called for yellow onion, but I had green onions and they were excellent
- ½ cup bread crumbs
- ¼ cup parsley
- This is where their recipe stopped, but I added a minced clove of garlic and salt and pepper
Directions
Preheat oven to 400 degrees.
Mix all the ingredients together and then scoop them into a buttered mini-muffin pan.
