The kids are back in school, Fall sports are in full swing, and it would seem our lazy Summer days are a distant memory! Ahhhhhh… I miss Summer. 🙂
If your family is anything like mine, then we’re moving and shaking all around town on any given week day. Both my kids are active in sports and after school activities making some nights busier than others. Its those nights when I have my go-to simple dinner dishes.
While I like to joke about having ice cream for dinner during the Summer, the truth that its really important to me that my family eat healthy meals (with maybe some ice cream after every once in a while :)). Mom truth is that I can tell when they have not been eating balanced. There are attention challenges, there are changes in moods and we all around don’t feel our best when we’re not eating healthy. So while there are nights when we do not have a lot of time to get something on the table, its key to have some healthy staples in the fridge and pantry to help.One of my family’s new favorite weeknight dinner ideas is this easy healthy vegetarian dinner made with RAGÚ® Simply Chunky Marinara Pasta Sauce.Part of making sure we’re eating healthy as a family, I like to make sure we have at least one or two vegetarian dinners. Meatless Mondays or Tuesdays, or Wednesdays, or Thursday too. Decrease animal product, increase plant based. Meaning I pretty much cram as many vegetables into something without them noticing too much. For this dish, what I have found is that if I finely chop up a zucchini or two and replace any of our ground beef or ground turkey dishes with it, my family does not even notice. WINNING! You can also add mushrooms finely chopped as well as any other vegetables your family loves. Okay, here is how you make it.
- RAGÚ® Simply Chunky Marinara Pasta Sauce
- One large or 2 medium zucchinis
- One bag of penne pasta (traditional or gluten free)
- 1 teaspoon olive oil
Start by boiling your pasta. While the pasta is cooking, finely chop your zucchini or shred it using a grater. One medium heat, in a medium to large saute pan, add olive oil and your chopped zucchini. Saute the zucchini till it is somewhat transparent and cooked through (5-7 minutes). Then add your RAGÚ® Simply Chunky Marinara Pasta Sauce and stir. Let cook down for a few minutes then reduce heat to a simmer.
What I love about the RAGÚ® Simply Chunky Marinara Pasta Sauce Recipe is that its made with 100% olive oil and contains no added sugar. Added sugar is the worst!! Its made with chunks of tomato, onion, garlic and and spices and all the deliciousness necessary for a yummy pasta sauce.
Once the pasta has finished cooking, drain the pasta and add it to the sauce and toss it to full coat the pasta with the vegetables and sauce. Serve with shredded Parmesan over the top and there you have it. Quick and easy dinner!
