Recently I was able to taste some really good vegan and gluten free snacks thanks to Vegan Cuts. They came packaged nicely in a cardboard box. With some coupons too- score!
There was a great variety of sweets, crackers and even an energy drink! These multigrain crackers were especially yummy, and I thought they would pair well with an edamame hummus I like to make.
Edamame hummus is a perfect snack if you have friends, like mine, that have a variety of diets. This is a spin off a traditional hummus. Your friends will appreciate your creativity, and thank you for the healthy snack! And, it’s so easy to make.
- One package frozen shelled edamame
- 1/4 cup tahini
- 1/4 cup water left over from cooked edamame
- 1/2 teaspoon grated lemon zest
- 4 tablespoons fresh lemon juice
- 2 cloves garlic
- 1 teaspooon kosher salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 4 tablespoons extra-virgin olive oil
- small handful of fresh flat-leaf parsley
Boil the Edamame according to the package directions, emitting the salt. Save the cooking water (it will be used later). Put all the ingredients in a food processor and whirrrr away.
After the ingredients are incorporated, drizzle in olive oil through the feed tube while the food processor is on.Add a bit more of the water the edamame were cooked in if the consistency is too thick.
Add parsley and you are done! I like to chill the hummus for a half hour if possible.
Viola! A healthy snack for everyone to enjoy.
