Have you heard of Lucy’s cookies? If you haven’t, you should!
Recently, I had the opportunity to meet with Dr. Lucy from Lucy’s cookies at an event in Pasadena. She told us the most amazing story as to how these cookies came about.
The condensed version is that when her son was just about 4 months she was about to head back to work (as a ER doctor) from maternity leave when she and her husband (also a doctor) decided to try and give her son a bottle of formula to ease into the transition. While she waited in the other room her husband sat down to feed the baby and within a few seconds her son went into anaphylactic shock. Luckily with quick reaction their son was fine but what they found out from there was that he was severely allergic to a number of things including eggs, milk, nuts, gluten.. Well as you can imagine that kind of news would put all kinds of worry into a parent. As he got older and he moved into solid foods they closely monitored and make all his meals. The one thing she found was missing was seeing her little toddler chubby hand holding and eating a cookie. After combing the aisle of every market in her area as well as the Internet, she soon realized that a “good” tasting cooking that was vegan, gluten free and nut free didn’t exist. So after a few batches at home, she came up with a recipe that she and her husband thought were pretty tasty and from there it went from making them in her home to a dedicated bakery and are across the nation in over 7000 stores!
I can tell you that I’m fortunate that family doesn’t have to worry about allergies or Celiac Disease (gluten), but I do worry about what is in the food that my family is eating. After talking to Dr. Lucy about the bakery and ingredients, I can tell you I would recommend them whole heartily! AND have I mentioned, they TASTE GOOD!!!!
