Italian Sausage Stuffed Mushrooms

- 25-30 Medium Mushrooms 2 bundles
- 1 Pound Italian Sausage
- 1 Tablespoon Olive Oil
- 1 Medium Shallot Minced
- 3 Garlic Cloves Minced
- ¼ Cup Parmesan Cheese 1 tablespoon Parmesan (for crust)
- ¼ Cup Bread Crumbs
Pre-Heat oven to 325 degrees.
In a medium-size saute pan over medium-high heat olive
oil. Add the Italian sausage into the hot pan, and browns while breaking it up into fine crumbles. Once browned, add minced shallot and garlic cloves and sauté for another minute. Remove
the sausage mixture from pan, and set aside.
In a bowl mix bread crumbs and 1 tablespoon of parmesan cheese till finely chopped to a breadcrumb.
Remove caps of mushrooms, setting stems to the side. Finely Chop the stems of the mushrooms and
add to sausage mixture. Add ¼ cup parmesan to sausage mixture as well and combine.
On a sheet pan, fill mushroom caps with sausage mixture till its overflowing. Sprinkle bread crumb mixture over the top of each filled mushroom. Bake in the oven for 20 minutes. For added golden color, broil mushrooms for the last minute.
