Easy Appetizers for a Crowd
These little bites would be great for your next party or get-together. They are sophisticated enough to serve as an appetizer for your holiday party or casual enough for the Super Bowl Party. This recipe yields 20-30 mushrooms, so there is just enough for me. 🙂 They really are delicious and I can't wait to make them again.

- Medium Mushrooms
- Sweet Italian Sausage
- Olive Oil
- Garlic Cloves (Minced)
- Medium Shallot (Minced)
- Parmesan Cheese
- Italian Bread Crumbs
Instructions
Preheat the oven to 325 degrees.
In a medium-size sauté pan over medium-high heat olive oil. Add the Italian sausage into the hot pan, and cook the sausage while breaking it up into fine crumbles.
Once browned, add minced shallot and garlic cloves and sauté for another minute. Remove the sausage mixture from the pan, and set it aside.
In a bowl stir to combine mix bread crumbs and 1 tablespoon of parmesan cheese till finely chopped to a breadcrumb.
Remove caps of mushrooms, setting stems to the side. Finely Chop the stems and add the chopped mushroom stems to the sausage mixture. Add ¼ cup parmesan to the sausage mixture as well and combine.
Bake in the oven for 20 minutes. For added golden color, broil mushrooms for the last minute.
On a sheet pan, arrange mushrooms an inch or two apart. Fill mushroom caps with sausage crumble till it's overflowing. Sprinkle bread crumb mixture over the top of each filled mushroom.

Mushrooms generally contain water and when you bake them the water tends to pool at the bottom. If you bake your mushroom caps upside down on the pan in the oven for 10-12 minutes while you are cooking the stuffing, the water will run out on the pan.
There are people that say to wash them underwater, and there are those that suggest just wiping them down. I like cleaning my produce, so I wash mine.
Yes, cooking mushrooms does kill bacteria. More reason to stuff and cook those babies.

- 1 Pound Italian Sausage
