We are like many of you and a busy family during the week. When we're both working and running around between activities, dinner time tends to sneak up on us. We have been making an effort to stay away from eating out and trying new nutritious recipes at home. The key is that our family meals have to be fast. I don't know about you, but if it take more than 30 minutes, forget about it. When I find a way to quickly create something DELICIOUS and loaded with veggies, I am going to shout it to the mountain tops.
For anyone that has spent any time on Made with HAPPY, should also know that we LOVE LOVE LOVE to entertain. We love having people over throughout the week as well as full blown parties. What I love about these cheesy butternut squash risotto balls is that they are a great cross-over of appetizers to throw out there during a game watching Sunday, or a premium side dish for your dinner during the week. I recently came across these two Alexia starch alternative products in the freezer section of my grocery store. If your family is anything like mine, they love themselves some starches and shy away from the veggies. Both the Califlower Risotto and the Butternut Squash Risotto, are gluten free, made with premium vegetables, non-GMO, and use all organic dairy ingredients which makes me all heart eyes!! Being the sly Mom that I am, I added them to our dinners without saying too much and both were gobbled down in a matter of minutes.
Don't get me wrong, both are great by themselves without adding a any ingredients to them. I just really enjoy putting a Made with HAPPY spin on them to create the ultimate cheesy risotto ball.
This recipe is great for both the Califlower Risotto as well as the Butternut Squash Risotto. We are in full Fall mode over at our house and we're obsessed with squash, so I'm showing you this recipe today!
Cheesy Butternut Squash Risotto Balls

Ingredients:
- Alexia Butternut Squash Risotto
- 1 ยผ cup bread crumbs
- ยผ cup flour
- 2 eggs beaten
- 2 mozzarella cheese sticks - cut into half inch pieces
- cooking spray
Directions:
Start by simply cooking the risotto as it states on the package. I microwave mine.
Once the risotto has cooled to the touch, using a ice cream scoop or spoon, create a ball with the risotto with the piece of mozzarella in the middle.Cover the ball in flour, then egg, then bread crumbs and then onto a parchment covered sheet pan. Spray the tops of the balls with cooking spray to get them golden brown and then into the 350 degree oven for 20 minutes. When you pull them out they will be golden and delicious and all kinds of yummy! These are a definite two thumbs up for whatever occasion you are making them for.
