We’re about a week out from Mother’s Day, so if you haven’t start planning, its time to start!
Prior to becoming a Mommy myself, we had a tradition in our family of celebrating Mother’s Day at my house where I cooked a great brunch filled with all kinds of culinary delights. I would set the table in the backyard filled with bright table cloths and dripping with flowers. One of the family favorite was my Crunch Vanilla French Toast covered in Strawberry Sauce.
If you’re looking for a great recipe to wow your Mom with this Mother’s Day, this is it!Sooo Good! Here’s how you do it!
Crunch French Toast
- Head to your local Smart & Final and grab a box of Oats & More cereal. We love First Street’s with Honey and Almonds. You will need approximately 2 cups of cereal.
Seriously, how many of you shop Smart & Final? If you haven’t tried it, you really should. I love that they carry everything from product to meats to bakery items. I also appreciate that I can get warehouse size when I need it and if I need just one thing, that I can get it there too. Best of both worlds (warehouse and grocery). Who doesn’t love one stop shop?
- A loaf of bread – Buttermilk
- 3 eggs
- 1 tablespoon milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- A pint of strawberries
- 2 tablespoon sugar
- 2 tablespoon water
- 1 teaspoon corn starch
- 1 tablespoon water
Cut your strawberries into small bite sizes and add to a medium heated small sauce pan. Add the sugar and water and heat for till the berries start to soften. Approximately 10 minutes stirring occasionally. In a small bowl combine the 1 tablespoon water and 1 tablespoon corn starch. Once its mixed into a paste like substance, add to the strawberries and continue to simmer for another 5-10 minutes. Set aside to serve with dish.
Heat pan on medium-high or if working on griddle, heat to 350 degrees.Add 2 cups of cereal to a ziplock baggie removing all air from the bag. Using a spoon or your hands, crunch the cereal down to a crumble size. Pour out of baggie into a shallow bowl.In a second shallow bowl, combine the three eggs, milk, vanilla and cinnamon and mix until fully combined.Take each bread piece and dip into egg mixture, then into the crumble and then onto heated pan.Cook 3-5 minutes each side.Serve either on the French Toast or on the side allowing for you guest to spread on as desired. Its a huge hit at our house, and I know it will be a huge hit at yours!
