Recipe of the Week: Zucchini Pizza
(Serving Size: 4)
This weeks recipe is a great weeknight dinner that is super tasty, easy to make and fun for the kids!
Ingredients:
- *4 medium size zucchini
- *2 tablespoons of olive oil
- *1 teaspoon oregeno
- *1 teaspoon basil (dried)
- *1 teaspoon thyme
- *½ cup shredded parmesan reggiano
- *1 cup shredded mozzarella
- *1 cup pizza sauce
- *1 package pepperoni (optional)
Directions:
Pre-heat oven to 350 degrees
Slice zucchini in half lengthwise. Using a melon-baller, ice cream scoop, or strong spoon - scoop out the inside of the zucchini and set aside
You are only going to use approximately half of the zucchini insides for this recipe. Store the other half to use in other meals and then finely chop the half you have left over. Place the chopped zucchini back in the bowl and add the olive oil, oregeno, basil and thyme. Then add ¼ cup of parmesean and mix together.
Drizzle a small amount of olive oil along the scooped out zucchini and then layer the bottom of the zucchini with pepperoni.
On top of the pepperoni, add the pizza sauce, then the uncooked zucchini mixture, and the rest of the cheese evenly distributing among the zucchini. In the oven for about 30 minutes.
They are so good and the kids will gobble them up!!! Remember when you have the kids help, they get excited to taste their creation and makes cooking fun! Happy Cooking!
