    No Complaint Meatloaf

    This is one of my all time favorite recipes. My whole family loves this, and I am pretty much guaranteed 100% return for seconds. I use ground turkey for this meatloaf. You won't miss the beef, I promise! No special equipment required, just your hands and a cookie sheet.

    Grab a large onion and mince finely. Pictured is one of my favorite knives: Mezzaluna 7" Stainless Steel by Giada. (It's the knife Giada De Laurentis uses in all her episodes - love her!)

    Saute in olive oil with a pinch of thyme for about 10 minutes. This will make the onion sweet and flavorful.003Add broth, tomato paste and Worcestershire sauce and cook for 5-10 minutes, until the liquid is reduced.008After the onion mixture had cooled, mix it with ground turkey, bread crumbs and eggs.     The recipe:

    • 1 large onion
    • 2 tablespoons olive oil
    • pinch of salt and pepper
    • ½ teaspoon dried thyme
    • ¼ cup Worcestershire sauce
    • ½ cup chicken stock
    • 1 Tablespoon tomato paste
    • 2 ½ lbs ground turkey breast
    • ¾ cups plain dry bread crumbs
    • 2 extra-large eggs
    • ketchup to top

    Directions:

    Preheat oven to 325 degrees F.

    In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme about 10 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Cook 5 minutes then allow to cool to room temperature.

    Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an un-greased sheet pan. Spread the ketchup evenly on top. Bake for 1- 1 ½ hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through.

    I served this with a red quinoa, kale dish. Add red quinoa and kale to the broth and cook according to the quinoa package directions. When slightly cooled, add avocado and feta. Simple side dish that the kids loved!014
