Don’t you love a dinner you can sit down to with the whole family, and not one person complains about what is on their plate? I like to call that an NC dinner- a No Complaint dinner. With 5 of us, ranging from two years old to adult, an NC dinner is a tough task. I will share with you my NC meals, and hopefully they will be a hit with your family too!
Best Broccoli Side
This No Complaint is simple, with only a few ingredients and a ton of flavor.
Ingredients:
Fresh broccoli (about 4 pounds)
Garlic…lots, a whole heaping pile (5 large cloves)Toss broccoli and garlic with olive oil (enough to coat, about 1/4 cup) and sprinkle with salt and pepper.
Roast at 425 for 25 minutes, or until tips of broccoli start to brown at the tips. This is the carmelization that makes it so yummy.
Tip: make sure broccoli is in a single layer on your sheet pan, or it will steam instead of roast.
Check once during the cooking time to make sure the garlic isn’t getting too brown. Over cooked garlic is bitter. (Usually if this happens, there isn’t enough oil.)
Variations: drizzle on soy sauce immediately after taking it out of the oven. Or, sprinkle with Parmesan. Or, squeeze a lemon over it. This side can be altered to fit whatever regional cuisine the rest of the meal is!
