This is one of my favorite recipes when I am in a hurry to get dinner on the table. It's so simple to make and only has a few, but very tasty ingredients. The best part? My kids love it!
Chicken Sausage and Kale Pasta
You can use any sausage you choose, but this is my favorite (my kids notice when I switch it up!):Also with the pasta - use any you like, but this is my favorite with this recipe:
I love this bag of Kale that Trader Joe's sells. Clean, chopped and ready to go (mostly ready - sometimes there is fibrous stalk still attached to some leaves that I need to pull off). And don't forget to grab some fresh garlic!Get you noodles cooking in salty, boiling water. Cook according to package directions. Make sure not to overcook. Mushy pasta is never good.
In a large saute pan put a ¼ cup of olive oil (this seems like a lot, but it's the only "sauce" that will be in this dish) and the chicken sausage that has been removed from the casings. Cook until the sausage is starting to brown, then add 4 large cloves of chopped garlic. Next add red chili flakes (optional). My kids are okay with a little heat, so I add a pinch. Both garlic and chili flakes can be adjusted to taste. Now throw in all the kale and a dash of salt and pepper. Cook until wilted. Add in cooked and drained pasta and you are done! Couldn't be easier, right?
