    ROW: Chicken Fried Minute® Rice

    I'm not sure how your weeknights look, but ours usually run a little like this:  Work all day, hustle to pick up one kid from preschool, then off to daycare where I'm wrangling the other kid. Then get back home where there is usually one kid crying or whining or both that they are hungry. I quickly pull  ingredients from the refrigerator and pantry in hopes of creating something healthy and delicious and more importantly FAST! If the meal doesn't come together in 20 minutes, probably not going to happen!

    This week, I'm sharing with you one of my families favorites that is all those things! Its healthy, taste unbelievable and is FAST FAST FAST!!!

    Recipe of the Week (ROW): Chicken Fried Minute® Rice

    Ingredients:

    • 1 cup Minute® Brown Rice
    • 1 tablespoon vegetable oil
    • 1 pound organic chicken breast tenders
    • 1 egg
    • I bag of stir-fry vegetables (fresh or frozen)
    • 1 table spoon low-sodium soy sauce
    • 1 teaspoon garlic powder
    • salt and pepper for taste
    Directions:

    We love the brown Minute® rice because it literally only takes 10 minutes to cook(the box does not lie)! LOVE THAT! Follow the instructions on the box for 4 servings

    While you're waiting for the water to boil for the rice, cut up the chicken tenders into small chunks. Add the vegetable oil to a hot wok and then add the chicken. It only takes a few minutes for the chicken to brown and cook through.

    Once the chicken is cooked through add the vegetables and garlic powder. Off to the side of the wok,  crack the egg and incorporate it till its cooked all the way through.

    Once the rice is cooked, add it to your chicken vegetable mixture.
    Toss together and add the soy.
    Then viola, less than 20 minutes a delicious meal that I guarantee the whole family will love!
