You read that right... the recipe of the week (ROW) is Thai Peanut Turkey Meatballs.
Here is how this all came together. There is a local restaurant here in San Diego (Besta Wan) that has the most unbelievable Thai Peanut Wings. The hubs and I first tried them about a year ago and just keep going back because they are SO GOOD. So just the other night we were having a craving for those wings, but with tired babies on a school nigh,t we figured we should just stay home and eat from our family dinner menu. On the docket for this evening was turkey meatballs. Hmmm... you know what would be good???
So here you have it. From Scratch!!!
Ingredients:
Turkey Meatballs:
- * 1 pound ground turkey
- * ½ cup panko (Japanese bread crumb)
- * 1 egg
- * 2 cloves of garlic
- * salt and pepper for taste
- * ¼ cup green onion - set aside a small bit for garnish
- * ¼ cup oil
Thai Peanut Sauce:
- * 2 cloves of garlic
- * 2 tbl ginger
- * 2 tbl rice wine vinegar
- * 2 tbl soy sauce
- * 2 tbl peanut butter
- * ½ cup coconut milk
- * ¼ tsp sriracha sauce (optional)
Directions:
Turkey Meatballs: In a bowl combine the ground turkey, Panko, egg, salt, peppers and green onions.

Then roll into individual ball size. This is total preference, but I like to keep them to about an inch to an inch and a half. Place them onto a baking sheet while you prepare the saute pan.
Pre-heat the oven to 400 degrees. Heat oil in large saute pan.
Brown the outside each of the balls in the oil for about 5 minutes and then transfer back to the baking sheet. Bake till cooked all the way through, about 15-20 minutes.
Thai Peanut Sauce:
Combine the ingredients and heat over medium-low heat till its well combined and simmering.
Serve over a bed of brown rice and I tell you, your mouth will thank you!
