Recipe of the Week: Green fries
Ok, it sounds like a concoction food coloring and mysterious mush! I'm happy to report it's not the case.
Back story...since meeting my dear husband nearly 7 and a half years ago I have been on a mission to convert him from a picky eater to a non-picky eater. Oh how I wish I could tell you "mission accomplished", but not so much. He has of course gotten so much better than when we first started out, but it's still a constant struggle to get him to eat his green.
With that being said, the minute Miss Syd was just a twinkle in our eye we discussed how we would do all it takes to make sure she does not follow in her daddy's eating footsteps. Long story short, and only 20 months in at this point, I think we're on the right track. Syd eats all kinds of greens and there is very little she's picky about eating. Goodness, long back story... sorry 🙂
Ok, back to the green fries! Just a kid friendly name for roasted green beans! Guess what??? It worked for both kids (Craig included)!
Grab a bundle of glorious green beans at your local farmers market this weekend! Cut each the tips and then cut the beans at a "French fry" length. Oven pre-heated at 425. After a good wash and pat dry, lay out the beans on a cookie sheet. Cover lightly with olive oil, salt, and pepper. Put them in the oven for 15-20 minutes. I serve them along side a burger and it's just like fries! Big hit!
