One of our Summer favorites is:
Mediterranean Fish, Rice & Vegetables in a Foil Packet
Its summery and warm and so quick that you're going to want to eat it every night. Plus grilling it outside, you're not heating up your already warm house. Win-win!
Ingredients: (serves 2)
There are two ways to make this dish that are equally delicious. One is to use a store bought Italian Dressing, and the other is to make your own version that I will be showing you in this recipe.
- Large Fish Fillet - I used Talapia, but it is so good with pretty much any mild white fish or Salmon.
- 2 Cups Instant Rice
- 2 Cups cut vegetables - I used a large zucchini, but if you wanted to use broccoli, peppers, or any mix will be just as tasty.
- 2 Tablespoon Olive Oil
- 4 minced cloves of garlic
- 1 diced medium size shallot
- juice from one good size lemon
- Salt and Pepper for taste
- 1 ¼ cup water
- Reynolds Aluminum Foil
Directions:
Fire up the grill and have it on medium to high heat. Cut a large piece of Reynolds Aluminum Foil and shape in a packet. We prefer to fold the foil in half and then tighten up the sides to make a pocket.Add vegetables to the bottom. Add 1 tablespoon olive oil and salt and pepper.Add rice on top of vegetables. From here you can add your shallot and garlic.Next you lay your fish right on top. Add the lemon juice, remaining olive oil, salt and pepper and water. *If you're going the Italian dressing route, you would use the dressing instead of the water and lemon juice and olive oil.We love lemon and so we like to add a few thin slices on top of the fish for added flavor.Seal up the packet and onto the grill. Grill each side of the packet for 7 minutes and flip. 14 minutes you are done!Empty the packet onto the two plates and viola you have yourself the most delicious Mediterranean Dinner. I love grilling with Reynolds Aluminum Foil because when you’re done with your grill, just roll some foil sheets together and scrub the grill grates clean of any leftover grease and build-up and you are done! Easy Peezy. You can even add some feta to the top if you're going for some real Mediterranean taste! Delicious!
