    Slimy Halloween App- Mossy Marsh Balls

    This is a quick and tasty appetizer for a crowd, or just a few! What's great is it can be made a day ahead, so you can spend time being spooky instead of cooking.

    Ingredients:

    • Log of goat cheese (small or large)
    • Store bought (or homemade) pesto
    • Lemon zest
    • Fresh parsley and basil.

    Pick equal parts of parsley and basil off their stems. Nothing exact about this, but you will want about half of a bunch of each. Finely chop.Zest one lemon and combine with herbs and add salt and pepper.Slice goat cheese into roughly ½ inch slices and roll in the herb lemon mixture. I stored mine in an air tight container until I was ready to serve them.

    When ready to serve, spoon a few tablespoons of pesto on your platter and place cheese ball on top. I served mine with Endive and wheat crackers.
