Okay you guys! There are those of you that when I mention the word Kale you turn around and run for the hills. I realize this isn't for everyone, but I have to tell you, I made this the other night and while my kids were initially, what in the world is this green stuff you are making me eat, they both ate the entire thing and I may have even heard a few yummy sounds coming out of them.
While Kale does tend to have a gritter taste then a spinach, it really is quite mild and makes for a fabulous pesto.
Here's how I make my simple kale pesto!
Ingredients:
- 2 cups kale pieces (no stems)
- 2 cloves garlic
- ½ cup olive oil
- ½ cup freshly graded parmigiano reggiano
- ¼ cup pine nuts
- ½ teaspoon salt
- juice of 1 lemon
Directions:
In your food processor, add your kale.Load the top with all the other ingredients and hit go!
Viola! You have yourself Kale Pesto!
I cooked up a package of glutten free pasta and then drained it, and mixed it together with the kale pesto and serve. You have yourself a Meatless Monday meal that is sure to please the whole family!
Note, if you're looking to make this vegan, you can easily eliminate the cheese.
