We spent this past weekend in the local mountains with some great friends. The house we found was right on a lake with a boat and so there were endless hours of fishing and fun to be had by all.
One afternoon while the Dads and kids were off exploring, the Moms got to squeeze in a little time to themselves to catch up and enjoy some yummy appetizers.
I whipped up some delicious appetizers served on few different varieties of Townhouse crackers. Served with a refreshing beverage of choice and you have yourself a great little girls happy hour.

Here's what I whipped up.First was an herbed goat cheese.
Herbed Goat Cheese
We are sharing our favorite herbed goat cheese recipe.
Ingredients
- 1 4 oz. package of goat cheese
- 1 tablespoon fresh thyme
- 1 tablespoon fresh basil
- 1 clove garlic
- pinch of salt
- pinch of pepper
Instructions
- Combine all ingredients into a food processor till smooth. Refrigerate up to a week.

BACON AND GOAT CHEESE FLAT BREAD
I loaded the Townhouse Flatbread crackers with the herbed goat cheese and then made two different toppings from there.
The first was a bacon and scallions mixture.In a hot pan I cooked 4 pieces of bacon. Cook it until it's done, but not yet crispy.
Remove from the heat and chop into smaller pieces. To the hot pan, add one chopped scallion and begin to brown.
Add back the chop bacon and cook together till brown and crispy. Should only take a minute or two.
Remove from heat and then serve approximately a teaspoon to each flatbread cracker. The salty of the bacon balances great with the slight tang of the goat cheese making your mouth all kinds of HAPPY.
ROASTED GRAPES AND GOAT CHEESE
The second topping was roasted grapes.
In a bowl, combine approximately a pound of red seedless grapes, a tablespoon of olive oil, two teaspoons of freshly chopped thyme and ½ teaspoon of salt.
Onto a parchment paper lined roasting pan and into a 400 degree oven for approximately 20 minutes until the grapes are soft and slightly wilted.
Add to the top of the goat cheese and you have yourself the most incredible appetizer. The sweet of the grapes also combines deliciously with the slight bitterness from the goat cheese. OH SO GOOD!
What I love about these appetizers is that they are great for casual entertaining where with just a box of Town House crackers, a few ingredients and you are ready to go. Yet, they are sophisticated enough to serve at your next cocktail party or entertaining the husband's boss. Having versatile options when entertaining is key.
