Tajin Rim
Funny side story. While I was pregnant with Made with HAPPY Girl and I was working in a corporate office 9-5, I would run errands at lunch and for some reason found myself at Walmart. There was a huge display of Tajin and they were selling them for 99 cents. So I bought two. I thought,
I'll take one home and have one at work so that I could add it to my lunch. Well, as it sat at my desk, I would find myself just pouring a little bit in my hand and eating it throughout the day. Finally one of my friends and co-workers finally pointed out that on the lid it says "This is not candy" and proceeded to take it away from me. It was a good idea since I was eating it like candy. Silly pregnancy cravings.
In any case, this is totally my opinion, but I believe it's the Tajin on the rim of the glass that makes this spicy watermelon margarita over the top delicious.
Okay, so without further ado, here is how you make this deliciousness
Spicy Watermelon Margaritas
Ingredients:
- 4 cups seedless watermelon, cubed
- 1-2 cups white tequila
- ⅓ cup lime juice
- ½ cup triple sec (orange liquor)
- 2 tablespoons simple syrup
- ½ - 1 thinly sliced jalapeno
Directions:
First, start by blending up the watermelon. It just takes a few seconds and it will become liquified. Depending on your blender and if you are looking for a smoother consistency, you may want to filter the juice through a cheesecloth or strainer. It doesn't bother me, so I just pour it right into the pitcher from there.
Next, add the tequila, triple sec, simple syrup, lime, and jalapenos. Depending on the level of spicy, you may want to adjust. If you want a little heat, a half jalapeno, but really one jalapeno is great!
Stir all ingredients together and it is ready to serve.
Don't forget the rim of the glass and the Tajin. Using a slice of lime, coat the outside of the glass with lime juice and then coat with the Tajin. It is all kinds of tangy and delicious.
I like serving with a small watermelon slice on the rim as well as a slice of lime and a slice of jalepeno.
