I am an official ambassador for Dole Food Company. This Summer I have teamed up with Dole to feature Mike and Sulley and the other not-so-scary folks of Monstropolis in Disney and Pixar’s Monsters, Inc. and showcase how fruits and veggies are anything but scary.
Summer Appetizers plus Disney equals all kinds of Made with HAPPY!

Summer Appetizers
Anyone that knows me, knows that entertaining and Summer are two of my favorite things.
While this Summer things might look as they did in Summer's past in terms of parties, it is still fun to whip up appetizers for a picnic or by the pool to make it like we are having a party.
Watermelon Salad Recipe
If anyone has ever had our watermelon feta salad they know that it is one of our all-time favorite Summer side dishes. The mix of fresh watermelon, fresh basil, feta cheese, and red onion topped with balsamic vinegar, lime juice, and olive oil in a large bowl makes my mouth water just thinking about it.
I love this recipe so much and decided that turn our Summer favorite into a bite-size.

For those with a slightly more sophisticated palate, we like to add a small piece of red onion and drizzle with balsamic vinegar.
We also love that this watermelon appetizer is gluten-free.
Fruits and Veggies 101
We all know that there can be some kids (and adults) that might have fears when it comes to trying new fruits and vegetables. What I love is that the dietitians at Dole put together a fun Fruits and Veggies 101 to share some facts, recipes, and even a little trivia to help lessen these fears.
Be sure to check out Dole’s fabulous webpage devoted to Disney and Pixar fun. It's full of Disney-themed Dole original recipes, printables, and other great digital downloads.
