    ​As Easter approaches, I'm excited to whip up a batch of adorable Easter Birds Nest Cookies for my family. These no-bake treats, also known as haystack cookies, are not only delicious but also fun to make with the kids. With just a few simple ingredients, you too can create these edible bird nests. They are great for celebrating the Easter season.

    These Easter Birds Nest Cookies fun Easter treat. Made with chow mein noodles, melted chocolate, as well as colorful chocolate candy eggs.  These little nests are a fun treat that captures the spirit of Easter in every bite. Plus, they are so easy to make the kids can help you with these cuties with ease.

    Haystack cookies are super easy and fun to make! You just need a few simple ingredients like crunchy chow mein noodles, yummy chocolate, and peanut butter. The best part... no baking is required! Simply mix everything, shape them into little bird's nests, and let them cool.

    They're perfect for kids to help out with in the kitchen! You can mix everything up and shape the cookies with your hands. They look like tiny haystacks or bird nests, and they taste really yummy too!

    This no-bake bird's nest cookie recipe is one of my son's absolute favorites. It's the perfect treat for Easter, Christmas Time, or any special occasion throughout the year. Grab your ingredients and let's get to making these bird nest cookies recipes. 

    • 1 ½ cups milk chocolate chips 
    • ⅔ cup peanut butter chips
    • 1 (5-ounce) container of cooked chow mein noodles
    • Cadbury Mini Eggs

    If you bake with your children, then these are an easy way to get them involved and they are fun to make. Easy cookies mean they will want to help more often and soon you will come home to already baked cookies by your kids! 

    The added bonus for this red velvet cookie recipe is no need for red food coloring all over the place and all over your and your children's fingers.

    Making these red velvet crinkle cookies from cake mix is as easy as pie... or cake!

    If your kids are interested in baking and maybe they are too young to operate the oven on their own, these are fun ways to ease into baking. A no-bake cookie recipe doesn't mean there is no heat. The key to this recipe is melted chocolate, so beginning with teaching the kids how to use a double boiler or microwave is a great place to start.

    Bird's Nest Cookies Recipe

    As for the flavor of the Haystack cookie, I used milk chocolate (my kid's favorite). They can be made with whatever flavor of chocolate you have on hand or enjoy more. We have made them with dark chocolate (my favorite), white chocolate chips, and semi-sweet chocolate chips as those are typically what we have at the house. We've even made them with a mixture of butterscotch chips and chocolate chips too. That's the beauty of these cookies, they can be made with any flavor of chocolate. 

    Here are a few other questions you might have before you get started:

    Can I Use Peanut Butter Instead of Peanut Butter Chips?

    Of course, you can use peanut butter instead of peanut butter chips. I recommend using creamy peanut butter if you do and a brand that isn't the oily separating kind or crunchy peanut butter. Those will give the cookies a different consistency.

    ​Can I Use Any Type of Chow Mein Noodle?

    You can use any type of cooked chow mein noodle for this recipe. The key is to make sure that they are quick-cooked, like the ones in the international aisle at your grocery store, or with the salad toppings. The cooked crispy noodles give these cookies their signature crunch.

    How to Make Haystack Cookies

    1. Line a baking sheet or cookie sheet with parchment paper or wax paper.
    2. Combine the milk chocolate chips and peanut butter chips in a double boiler over boiling water. Stir until melted and smooth, about 8 to 10 minutes.
    3. Combine melted chocolate peanut butter chips with chow mein noodles in a large bowl. Stir until well-coated. 
    4. Use a cookie scoop to drop the mixture onto the parchment paper-lined baking sheet. 
    5. Form the mixture into nest-shaped cookies, making a well in the middle to place your chocolate Easter eggs in the center of each cookie nest. 
    6. Let the chocolate set out or in the freezer before serving. 

    Viola, you have delicious cookies to serve for Easter!

    Tips For Making This Happy Recipe

    • If you prefer melting your chocolate and peanut butter chips in the microwave instead of a double boiler, use a large microwave-safe bowl and heat in 30-second increments string in between until smooth.
    • When forming the nest, if you find it difficult to make on a baking sheet, you can also use a muffin pan and place the nest into the cup of the muffin tins which will help in forming the well of the nest.
    • If you cannot find the Cadbury Mini Eggs for this recipe, any Easter candy works. Robin’s Eggs (Malted milk eggs), jelly beans, or M&Ms.
    • In place of the chow mein noodles, you can also use chopped pretzel sticks or shredded coconut.

    ​How To Store Birds Nest Cookies

    ​Place your cookies in an airtight container at room temperature with parchment paper in between layers for up to two weeks.
