Once I had kids, I decided that I needed a better recipe that was gooey and yummy. After some tweaking and experimenting, I have come up with a winner rice crispy treat recipe. A fun little fact about me is that when it comes to cooking, I big puffy heart creating recipes that use whole ingredients. No leftovers.
When I buy cereal and get it home and it doesn't fit in my pantry cereal container, it drives me bonkers.
If ingredients call for half a can of something, I may never make it again because 8 out of 10 times the other half ends up getting thrown out, rather than getting used. Just a little quirk of mine.
I hate being a waster, so many times I end up making recipes that call for a whole bag of something or a container. I tell you this because this rainbow rice crispy treats recipe uses the whole bag of mini marshmallows.

The three ingredients you need to make these fruity pebble rice krispie treats
- mini marshmallows
- fruity pebbles cereal or rice Krispies cereal
- butter
How to Make Rice Crispy Treats
- Line the bottom of an 8x8 pan with foil or wax paper.
- Spray the prepared pan with cooking spray and set it to the side.
- Over medium heat to low heat, melt butter.
- Add 5 of the 6 cups of marshmallows and stir.
- Once it's completely melted, remove from heat and fold in the cereal.
- After all, cereal is fully coated, mix in the remaining cup of marshmallows.
- Pour the mixture directly into to the pan (or you can line it with parchment paper) and lightly press the mixture down to even out. (The more compact, the harder your treats)

The main reason your rice krispie treats get hard is that you have overcooked your marshmallow. As soon as the marshmallows mixture melts, remove it from the heat and fold in your cereal.
It is not necessary to put your rice crispy treats in the fridge. If for some reason you want to help cool faster, then you can for a few minutes. Otherwise, they are softer and gooeyer if you leave them on the counter to come to room temperature.
The easiest way is to let your rice Krispie treats cool completely. If they are warm, they will become messy. Once cooled, remove the whole pan of treats and place them on a cutting board. Then using a larger knife or pizza cutter, cut them into pieces.
You absolutely can make these the day before. They are best the day of, but in the case you are making them before, store them in an airtight container and they will be good for up to 3 days. Although, I doubt they will last that long.
