Churro Cupcakes From Scratch
With Cinco de Mayo coming up, I thought it would be so much fun to make these churro cupcakes from scratch. Of course, including homemade churros on top of the cupcakes! We only ate our weight in churros the last time we were at Disneyland, and so I knew these would be an absolute hit!
What I love about these cupcakes is that you can make each of the pieces from scratch like we are going to show you down below, or you can swap them out with store bought to make them even easier. The rich cinnamon cream cheese frosting along with the moist cupcakes make these the most delicious cupcakes that your family and friends are going to want you to make for every occasion.

Cupcake Batter
- Dry Ingredients: This is going to be your flour, baking powder, baking soda, salt, and sugar mixture that is going to make the best cupcakes
- Ground cinnamon: Churros are all about ground cinnamon. This is going to add the churro flavor and the best part of these cupcakes!
- Wet Ingredients: This includes vegetable oil, vanilla extract, and buttermilk which will give your cupcakes the acidic moisture for fluffy cupcakes
Cinnamon Cream Cheese Frosting
- Cream Cheese: Pre-soften the cream cheese to simplify blending in a stand mixer or electric mixer bowl.
- Butter: Allow the unsalted butter to sit on the countertop until it reaches room temperature.
- Ground cinnamon: Again, churros are churros because of the cinnamon.
- Powdered Sugar: This forms the foundation of the homemade frosting. Enhance its consistency by incorporating sweet confectioners sugar.
- Vanilla Extract: Vanilla adds a great taste to your frosting.
- Milk: Gives an extra creamy texture to the frosting.
Chocolate Sauce
- Dark Chocolate: I love the flavor of dark chocolate with churros, but you can also use milk chocolate to give a similar taste.
- Heavy Cream: This gives the chocolate sauce a rich creamy feel.
Topping
- Churro Bites: I love making our own traditional churros bites for the top of our cupcakes, but you can also grab some churros from the frozen aisle at the grocery store and cut them into small bite sizes.
How To Make Churro Cupcakes
Grab your cupcake tin and get ready to impress with this delicious churro cupcakes recipe
- Prepare: Preheat the oven to 350 degrees Fahrenheit. Line your muffin tins with cupcake liners and set aside
- Stir: In a large bowl add the flour, baking soda, baking powder, cinnamon, and salt all at once. Whisk together and then add the white sugar. Mix again until all the dry ingredients are combined.
- Combine: Add the buttermilk, oil, and vanilla, to the dry ingredients. Whisk together until a thick batter forms.
- Fill muffin pan: Spoon batter into the prepared cupcake liners. Fill muffin cups ¾ way full. Bake in the oven for 20-25 minutes or until a toothpick inserted into the cupcake comes out clean.
- Frosting: While the cupcakes are baking, make the cinnamon buttercream frosting. In a medium bowl add the cream cheese and butter, beating with an electric hand mixer until creamy. Add in the powdered sugar and cinnamon. Blend again until combined and thick. Then add the vanilla and milk, a tablespoon at a time. Mix again until smooth and creamy, add as much milk as needed to get a thick, but smooth and pipable consistency. Transfer this into a piping bag fitted with a star metal tip of your choice. Let the cupcakes cool for 30 minutes before frosting.
- Decorating: In a saucepan, heat the heavy cream for the chocolate sauce. Wait until the milk is steaming before removing from the heat and pouring over the chopped chocolate. Let sit for a couple of minutes before whisking together until a smooth chocolate sauce is created. Pipe a large swirl of icing on top of each cupcake. Top with a tablespoon of the chocolate sauce, creating a subtle drip from the top of the frosting down its sides. Top with churro bites, serve, and enjoy!
- Storage: Store in an airtight container for up to 3 days in the refrigerator.
Churro Cupcake Recipe
I hinted earlier that there are a number of different modifications to this recipe. I made each of the pieces from scratch, but here are some tips and modifications for our churro cupcake recipe.
- Cake Mix: If you would prefer box cake from making it from scratch, a cinnamon cake mix, vanilla cake mix, or even spice cake would be great for this recipe.
- Cupcake or Cake Size: This recipe also works great for mini cupcakes as well as a cake. No matter the size, you're going to get the churro taste in every bite.
- Buttermilk: The buttermilk in this recipe gives the acid balance to the sweetness of the cupcakes as well as making the cupcakes tender. If you don't have buttermilk, simply add a tablespoon of vinegar to your milk and let it sit for 10 minutes. Viola... Buttermilk!
