Unicorn cupcakes make everything better!

It would seem that wherever you turn these days, there are unicorns. Clothing, accessories, bags, EVERYTHING. They are a huge hit at our house for sure. I mean, I've been known to have a few unicorn headbands myself 🙂

When my daughter asked for unicorn cupcakes for an upcoming party, I had to put my thinking cap on.

I used a funfetti box cake and made the cupcakes in ice cream cones. If you're wondering how to do this, head to this post for instructions. While those are cooking, it's time to make the top of the unicorn cupcakes.

Next, I found these amaze-balls spiked ice cube trays. I have a few other really fun things I'm going to show you that you can make out of these too. GET THEM! They are rad and I now only take my ice in spikes 🙂

I melted the turquoise chocolate in the microwave for just 30 seconds and stir. Spray the ice cube trays with cooking spray, and then spoon the chocolate into the spikes. Place the tray in the freezer for 15 minutes and then pop them out.

Once you have your cupcakes and unicorn horn, it's time to decorate. I do not know why this is the case, but when it comes to decorating cakes unless it's a simple sprinkled cake, I lack the cake decorating gene.

Then I found this little wonder! The Color Swirl Kit. This little tool makes it super easy to make these unicorn beauties look like you are professional and be as cake decorating challenged as I do.

How to Make Swirl Cupcake Frosting

Simply scoop a cup of white frosting into a bowl and add some food coloring gel. Once you have the three colors you want to use, then scoop each into a separate bag from the kit.
