Chocolate Rice Krispie Treats With Marshmallows
Growing up, Rice Krispie Treats were those hard chewy bars that would often cut the roof of my mouth up.
It wasn't until I moved out on my own and tried to make my mom's recipe, did I realize why they were so hard (hint... you can't overcook the marshmallows, but more on that later).
That is when I started making the classic version, as well as the peanut butter rice Krispie treats, and these chocolate rice Krispie treats with marshmallows.
We even used our traditional treats as the base for our dessert sushi which is all kinds of fun.
Cereal Treats
It wasn't until I became a Mom and was doing some serious shopping down the cereal aisle, that I realized that crispy rice cereal came in other flavors like Coco Krispie, Cocoa Pebbles, and Fruity Pebbles.
While my family absolutely adored the Fruity Pebble Rice Crispy Treats I made, we all kind of decided that the chocolate rice Krispies treats made with real chocolate were richer and more decadent.

How to Make Rice Crispy Treats with Chocolate
It's important to let the rice Krispie treats with chocolate cool to room temperature before cutting. If they are still warm, they will not hold their shape and be a complete mess.
Once cooled, remove the entire square pan of treats from the baking pan. Then on a cutting board using a knife, cut into squares or rectangles. Whatever you prefer.
Chocolate Rice Krispie Treat Recipe
Time Needed: 15 minutes
Start by lining your 8x8 pan with parchment paper or wax paper. It is a good idea to then spray the bottom of the pan, bowl, rubber spatula, and knife with nonstick cooking spray. Set the pan to the side.
Add the butter and the marshmallows to a large saucepan and melt on low heat. Stir the mixture until the marshmallows and the butter melt.
Add the cocoa powder and continue to stir the mixture.
When the marshmallows are melting add the chocolate chips to the mixture and combine well.
Once all the ingredients are melted and combined well, remove from the stove and stir in rice crispies.
Take the rice crispies to the prepared pan and gently press the mixture down.
Let the bars cool down for 1 hour to come to room temperature.
Cut and serve!
Why do my rice crispy treats get hard?
The most common reason for hard rice Krispie treats is that you have overcooked your marshmallows. Do not try and heat them up fast on high heat. Heat on low heat until they are mixed all together and then remove them from the heat and fold in your cereal.
Are you supposed to refrigerate Rice Krispie Treats?
It is not necessary to put your chocolate rice crispy treats in the refrigerator. And honestly, I prefer to not. If for some reason you need to speed up the cooling process, then you can place them in for a few minutes. Otherwise, let them cool on the counter and you will have the gooiest chocolate rice Krispie treats.
How Long Can Rice Krispie Treats sit out?
I have found that wrapping each individual delicious treat in plastic wrap, will keep them soft and chewy. If you store your crispy treats in an airtight container, they are good for up to 3 days. Although with how delicious they are, I doubt they will last that long.

- 3 tablespoon Cocoa Powder
- 1 cup Milk Chocolate Chips
