Summer is not over my friends! As a matter of fact, we're expecting 90-degree temperatures here on the west coast next week. This means we are going to squeeze every ounce of Summer including our go-to adult beverage of the Summer. It is so refreshing, you may want it all year around.
This raspberry prosecco cocktail is going to be the hit of any party!
For those not familiar with Prosecco, it is a sparkling wine grown in the North-East Veneto region of Italy.
It's fruity and light and sometimes has a hint of sweetness. Unlike Champagne, what we love about Prosecco and Riondo Prosecco in particular, it can be drunk every day and not only on special occasions.
All Summer we have been enjoying a bottle of Riondo with friends by the pool, at the beach, and at concerts in the park. It is delicious by itself or with some added awesomeness. Riondo Prosecco Cocktails definitely makes Summer a bit more bubbly.
If you are anything like us, we absolutely hate turning on the oven during the Summer.
Most of our meals were either cooked on the grill, or filled with fun cool salads. Many of our Summer dinners consisted of a glass of Prosecco and a charcuterie board filled with meats, cheeses, fruit, and nuts. It was our own Italian for a Summer dish.
Even with the kids starting back to school, this last week we have tried to continue with dinner on the patio and dishes full of cold pasta salads, fruit salads, and green salads. Basically all the salads. 🙂
Ingredients You Need To Make a Raspberry Prosecco Cocktail
- Prosecco
- Chambord
- Raspberries
- Mint
Raspberry Prosecco Cocktail Recipe
- Pour Chambord in the bottom of your glass.
- Slowly pour the Prosecco over the Chambord filling the glass.
- Add raspberries and mint for garnish.
- A fun alternative would be to add a teaspoon of simple syrup to the bottom of the glass with a pinch of mint and to muddle the two together.

What is the Difference Between a Bellini and a mimosa?
Believe it or not, the difference between a bellini and mimosa is not champagne vs. prosecco. Both drinks can be made with Champagne or Prosecco.
The main difference is that mimosas have added juice to the cocktail. Champagne tends to be dryer and less sweet than prosecco and so adding a sweet fruit juice balances nicely.
Bellinis are made without juice but with puree. Traditionally, bellinis are made with peach puree and peach schnapps.
Additional Questions
Prosecco tends to be on the sweeter side and so I love pairing it with more salty or savory dishes. Charcuterie platters of cheese, meats, and nuts. Dishes that pair well are fishes or poultry.
Many fruits are incredible in prosecco and make amazing bellinis. We love raspberries, mango, peaches, strawberries or pomegranates.
Prosecco can most definitely be used for mimosas. Mimosa is simply a champagne or prosecco base mixed with fruit juice. Prosecco tends to be sweeter than champagne and so adding a sweet juice will make it even sweeter.
